frozen chocolate banana treats

they are really a very simple treat.  but the day i made them, my artsy-fartsy side took over so they look a lot more complicated than they are.  

peanut butter
coconut oil

step 1: cut up your bananas and lay them out on a piece of wax paper.
this is one of the ways i use up the bananas that are starting to turn speckly

step 2: with a frosting bag or a zip lock baggie (with a corner snipped off) pipe peanut butter onto the bananas.  now put them in the freezer for a while so that they stay firm for the chocolate dipping. 
i like now in this picture my peanut butter baggie looks like a goldfish.  oh, it's the little things in life that make me so happy!

see.  all artsy-fartsy with hearts.  in the end they weren't distinguishable, but it was fun while it lasted.  <3

step 3: melt your chocolate with a little bit of coconut oil (crisco also works).  the oil will give your chocolate a little more of a glossy look.

step 4: dip your bananas in the chocolate.  i found the easiest way was to stick them to a little bit of chocolate on the spoon and give them a quick dunk.  
note: while dipping, avoid setting the frozen bananas on the counter directly above a hot steamy dishwasher, as your bananas will quickly start to thaw and turn quite mushy

step 5: pop them back in the freezer to firm up the chocolate.  you can leave them plain or top them with a little white chocolate for decoration.  

Isaac thought they were great and ate about 7 at once.  i'm calling it a healthy snack.  after all, it's mostly banana and peanut butter.  that over rules the chocolate, right?
