and my favorite thing about making Mexican food at home? anything goes! it's so easy to just toss stuff together and end up with a really great dish. yeah, it might not be real authentic, but it's still super good.
last night we whipped up some great pork fajitas with some left over pork roast i had in the fridge. i tossed the meat into my skillet with some onions and peppers (and a little coconut oil to keep things moist & non-sticky). once those got going i seasoned it with chili powder, cumin, salt & pepper. done!
(please excuse my messy stove top, i was busy cooking.)
we had them in gluten free ivory teff tortillas last night.
but i prefer it piled on some rice and corn with a little sour cream & avocado.
mmmm... a close up so that you can all see how tasty my lunch was today.
this meat freezes really well, so it's easy to make extra and freeze the left overs for another day.
that is, if you have any left overs.
p.s. i know several people that get scared without a recipe that has measurements. don't be! feel free to add what you like and leave out what you don't. adjust amounts based on what tastes good. don't have chili powder or cumin? use a little taco seasoning instead. go with what you have and what you enjoy. i personally feel that cooking should be as un-stressful as possible!
